
Brown rice salad with mango.
Salad.
2 C cooked brown rice.
¼ finely diced red capsicum.
1 deseeded cucumber diced.
2 sticks of celery finely diced
2 sliced shallots.
125g tin of corn kernels, drained.
1T fresh chopped coriander.
1 Large mango diced.
Dressing.
1/4C lime juice.
1/2t fish sauce.
1T sweet chilli sauce.
In a large bowl combine the salad ingredients.
Drizzle with dressing and mix to combine.
Delicious as a side to fish or chicken.
