The fact is that fried rice is available in several styles. In China, it is generally seasoned lightly with some salt with a little bit of soy sauce or even another oriental sauce, and even some small amounts of meat. In the Chinese-American tradition, you’ll find it made with bigger chunks of meat, and much more sauce.
The secret about making the perfect fried rice is texture. We need rice that has a distinct grain, one that has a chewy fried exterior along with a very tender bite. You will want grains that are separate enough from one another in order to taste and enjoy the texture, but yet sticky enough for you to pick up little clumps of it with chopsticks or a fork.
You will find that most fried rice recipes request Chinese-style rice with medium-grain, although there are Thai-style versions that utilize jasmine rice, and the popular Japanese-style fried rice is often made with short-grain rice that is used for sushi.
You will find that long-grain rice varieties will be the least desirable, as it will fall apart a bit as it is stir-fried and it also lacks the plumpness that provides fried rice with its signature tender texture.
Most chefs will tell you that these are a preferred list of rice types to be used for frying:
Jasmine: This is medium-grain rice of a Thai origin that has provides a perfect level of stickiness and individual grains. Jasmine rice will also provide its own brand of aroma to the kitchen.
Medium-grain white rice: This is the type we will see mostly in popular Chinese restaurants. Like jasmine, the rice of medium grains has wonderful great balance. They have strong individual grains, but will clump very well also.
Sushi rice: This Japanese-style of rice has superb short grains and is stickier than your typical medium-grain rices. This will make it more difficult to stir-fry without having some clumping, but it does provide the chewiest texture of the three, which is certainly a good thing.

Our local Shogun makes the absolute perfect fried rice. Agree with others that precook the rice and cool it down (put in fridge for a day even) before doing the fried rice. Also, we LOVE the spicy mustard sauce our local Shogun uses. Took me a while to find, but I HIGHLY SUGGEST S&B Oriental Hot Mustard POWDER (I buy it on Amazon) – it is the closest I’ve come to what the restaurant uses – everyone in my family likes EXTRA of this.
