Vietnamese-Style Bάnh Mì Burgers

4 servings

These are burgers
seasoned with curry and topped with a spicy mayonnaise sauce that has been blended
with a hot sauce.  Additional toppings
include pickled carrots and jalapeños. It is served on a French bread baguette. Bάnh Mì actually is the
Vietnamese word for bread (although it is understood to mean sandwich) and the baguette
was introduced when the French were there.

Ingredients

Pickled carrots:

1 cup matchstick
carrots

¼ cup rice vinegar

1 tablespoon sugar

Spicy mayonnaise
sauce:

½ cup mayonnaise

2 tablespoons hot
sauce or chili paste

2 teaspoons tomato
paste

1 garlic clove, minced

Burgers:

1 ½ pounds ground
beef chuck

1 ½ teaspoons curry
powder

Kosher salt and
freshly ground pepper

unsalted butter,
softened

One 24-inch baguette, cut
into 4 pieces and sliced open

Pickled jalapeños,
thinly sliced

Sprigs of cilantro
(optional)

Directions

 In a small bowl, toss the carrots with the rice
vinegar and sugar and let stand for 10 minutes to pickle the carrots.  Drain and set aside. 

In another small bowl, whisk the mayonnaise with the hot
sauce or chili paste, tomato paste and garlic. Refrigerate until ready to use.

Combine the ground beef
with the curry powder.  Form the meat into
four 6-inch-long oval patties and make a slight indentation with your thumb in
the middle to help prevent crowning as the burger cooks. Sprinkle salt and
pepper on the burgers after placing them in a large skillet. Cook the patties
over moderate heat.

While the burgers are
cooking spread the butter on the cut sides of the baguette. Set the bread cut
side up on a baking sheet and broil for a few minutes, until lightly toasted. Or
put the buttered bread on a flat pan on the stove and cook them until they are
toasty.  Spread the spicy mayonnaise on
the bread and top each baguette section with a burger patty, the pickled carrots,
pickled jalapeño slices and
cilantro sprigs. Close the sandwiches and serve hot.

Notes

Season the mayonnaise according to your level of
tolerance for spicy foods.

Matchstick cut carrots are available in the
produce section of larger grocery stores. Jars of pickled jalapeño slices are also available in the pickle section
of larger grocery stores.

Cilantro sprigs are optional toppings depending on
whether or not you like them.
