

Spanish Rice with Beef and Bacon

Even though this dish doesn’t come from Spain and isn’t
served there it is called Spanish Rice. It is a good one dish meal that is filling, easy to make and uses
ingredients that most people already have.
Ingredients
8 slices of bacon
3 tablespoons bacon fat (or butter)
1 cup uncooked long-grain rice
1 small onion, chopped
1 garlic clove, minced
1 pound ground beef
2 (10 ¾ ounce) cans tomato soup
1 can water
2 teaspoons chili powder
½ teaspoon ground cumin
1 teaspoon salt
1 cup shredded Cheddar cheese
Directions
Cook the bacon until brown and crispy. Place the bacon on a paper towel to drain. Break the bacon into small pieces and set
aside. Meanwhile drain the bacon fat
from the pan in order to reach 3 tablespoons. If necessary, add butter to reach 3 tablespoons.
In a Dutch oven cook and stir the rice in the bacon
fat until the rice is lightly browned. Add
the onion and garlic into the rice. Cook
and stir until they are tender which should take a few minutes.
Add the ground beef into the mixture and stir it
until the beef is brown and crumbled. Drain
off the excess fat. Stir in the tomato soup,
water, chili powder, cumin and salt. Cover and simmer over low heat until the rice is tender and the liquid
is absorbed, about 30 to 40 minutes. Stir from time to time to prevent the mixture from sticking to the
bottom.
Serve with bowls of shredded cheese and crumbled bacon which can be sprinkled over the top of the
Spanish rice. Corn bread and sour cream
are great additions also.
Notes
You can substitute ground turkey for the beef. You can also add more items if you like such
as chopped red or green pepper or green chilies. Adjust the seasonings to your
taste.
